Jimoto Ya serves Hokkaido Ramen created by Chef Nobumasa Mieda of Michelin-Starred Kaiseki Restaurant (Mieda). Their signature broth is prepared using pork bones and amaebi (sweet prawn). This special blend of broth is super flavourful and exudes a distinct prawn aroma that will please die-hard prawn lovers. Personally, I found the broth too rich for me, but many foodies are wowed by it.
However, I do like that this ramen is served sealed with a layer of ebi oil, which helps to keep my broth warm throughout the meal! I am also very pleased with most of their agemono.
Each bowl of ramen comes with springy noodles, a perfectly cooked Japanese onsen egg and minced meat fried in its own oil. As the broths here are strongly flavoured, foodies with a light palate may want to consider sharing the ramen then add on some agemono (their deep fried lotus root and corn croquette are amazing). If you still have room for desserts, give their Snaffles original cheese cake a try!
For those who are looking for an intimate dining experience, do call in advance to reserve their private rooms. Jimoto Ya has two 4-seater rooms that can be converted to accommodate 8-10 persons in one room.
