For those who like Japanese cuisine, are you familiar with Jingisukan? No? Well, no surprise here. Even I who once resided in Japan for 6 months never knew about it until I was invited to The Hitsuji Club for a food tasting.
The Hitsuji Club originates from Hokkaido and specializes in Jingisukan (ジンギスカン), a dish of grilled lamb on a metal skillet. Jingisukan is translated from "Genghis Khan", a famous leader of Mongol Empire. And guess what is their staple food? Lamb! Before you say you don't like lamb, give me a chance to convince you that this is one lamb you have to try!
Although I eat lamb and mutton, I avoid those that are too gamy. Typically, lamb (meat from sheep less than 1 year old) has less fat and a more delicate flavour while mutton (meat from sheep more than 1 year old) is more fatty with a stronger (gamier) taste. At The Hitsuji Club, only chilled lamb from Australian sheep (6 to 8 months old) is served. According to the owner, Australian lamb is preferred over Japanese lamb for its better flavour. This lamb is supposedly of such a high quality that some customers request to eat them raw!

For those of us who prefer cooked lamb, table-side service is provided. Personally, I like it that they grill the meats for us so that we can relax and enjoy properly cooked meats. Often, when I had to handle grilling, I ended up with overcooked and burnt meats. While grilling is going on, we can also start nibbling on their delicious sides in between conversations.

Like beef, lamb has a better texture when they are not fully cooked. When cooked to pink, I enjoyed the premium fillets (better than the standard fillets and loins) since they are more tender with the slightest hint of lamb flavour. In fact, premium lamb fillets can easily be mistaken for beef. Both the standard fillets lamb loins are harder to chew with a stronger flavour.
But, the BEST part of lamb is still the bone-in lamb chop! When perfectly cooked, lamb chop is tender and juicy with a silky texture that's similar to a Kampung Chicken Drumstick. As the lamb chop is a thicker cut (compared to the fillet), it also has a superior bite and is more flavoursome. To get perfect chops, the waitress removes the fats from the chop while grilling to be cooked separately. This way, the fats can be cooked for longer to become crispier while the rest of the lamb chop is not overcooked.

Another thing that I like about The Hitsuji Club is that they use lamb fat instead of butter to oil the skillet. I feel that this helps to reinforce the natural flavour of the meat.

Okay, so you have decided to give me the benefit of doubt and try the lamb, what if among your dining kakis, there are those who are allergic to lamb? Fret not, pork belly, chicken (there is no beef) and veggies are also available on the menu. No more worries right? All that is left is to make a reservation!
